Ingredients:

500g minced meat (beef or chicken)

2 medium onions, finely chopped

3 tablespoons oil

5 whole spices (1 bay leaf, 2 cloves, 2 green cardamoms, 1 small cinnamon stick, 5 black peppercorns)

2 medium potatoes, peeled and cubed

1 cup green peas (fresh or frozen)

1/2 cup plain yogurt, whisked

1 tsp salt (adjust to taste)

1 tsp red chili powder

1/2 tsp turmeric powder

1 tsp coriander powder

2–3 green chilies, sliced

Fresh coriander leaves, chopped (for garnish)

Method:

  1. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn soft and transparent (do not brown them).
  2. Add the whole spices (bay leaf, cloves, cardamom, cinnamon, and peppercorns) and sauté for a minute until fragrant.
  3. Add the minced meat (keema) and cook for 4–5 minutes until it changes color.
  4. Now add salt, red chili powder, turmeric powder, and coriander powder. Mix well and let it cook for another 5 minutes, stirring occasionally.
  5. Cover the pan with a lid and let the keema cook in its own juices for 10 minutes on low heat.
  6. Uncover, add the whisked yogurt and cook on medium heat while bhunofy (sautéing) until the oil separates from the masala and the keema becomes rich in color.
  7. Add the potato cubes and 1/2 cup water. Cover and cook on low heat for 10–15 minutes or until the potatoes are tender.
  8. Once the potatoes are nearly done, add green peas and cook uncovered for another 5 minutes.
  9. Finish by adding sliced green chilies and fresh coriander. Stir well and turn off the heat.
