Instructions:

  1. Prep: Preheat your oven to 170°C. Grease and line a loaf pan with parchment paper.
  2. Prepare Fruits: In a small bowl, mix the dried fruits with 1 tbsp flour to coat them. This prevents them from sinking to the bottom of the cake.
  3. Cream Butter & Sugar: In a large bowl, beat the butter and powdered sugar together until light and creamy.
  4. Add Eggs & Vanilla: Add eggs one at a time, beating well after each addition. Mix in the vanilla essence.
  5. Combine Dry Ingredients: Sift the flour, baking powder, and optional spices together.
